Our second costume this Halloween: Sandy and Danny from Greece!
On Halloween we went out with friends to a DELISH Greek restaurant all dressed up and then to another fun Halloween party.
Also, my friend Brandi made the BEST pumpkin bars with cream cheese frosting the other day. I attempted to remake them, and thought I would share the recipe!
Beat 4 eggs till foamy and add:
2 cups sugar
1 cup oil
1 - 15 oz. can pumpkin
Beat 2 minutes on medium speed then add the following (already combined in another bowl):
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
2 tsp. cinnamon
Beat 1 minute on low speed. Pour into sprayed/greased jelly roll pan and bake @350 degrees for about 25 minutes.
Cream Cheese Frosting:
8 oz. cream cheese
1 cup butter
2 tsp. vanilla
4 cups powdered sugar
Cream butter, cream cheese and vanilla - then add powdered sugar.
Once cooled, frost. Keep refrigerated (they taste MUCH better this way!)
