Zucchini Apple Spice Muffins

  • 1 medium zucchini, shredded (about 1 cup worth)...make sure you squeeze out the extra juice
  • 1 apple (I used gala), shredded (less than 1/2 cup worth)...same here squeeze out the extra juice
  • 1 cup almond butter (I used peanut butter)
  • 1/4 cup raw honey
  • 2 eggs, whisked
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon baking powder
  • pinch of salt
  • Cook at 350 until you can poke a fork through it
